There are two main bases for the cookies. An oat base (example: oatmeal chocolate chip, oatmeal raisin, Sea Salt Caramel, etc.) and a brown sugar base (example: Sprinkle cookies, PBCC, Skor Bit, etc.). They bake differently so here are a few tips:
Oatmeal cookies - dough isn't combining well. Add fully melted butter, a few tablespoons at a time, until the dough combines. Don't be afraid to wash your hands and then form the dough balls with your hands - this helps the butter fully coat the oats.
Oatmeal cookies - cookies are baking in a ball shape instead of a flat shape. The oat based cookies don't melt/bake down as much because they contain oats. Feel free to press them down prior to baking or midway through baking for the perfect shape.
Brown Sugar cookies - dough is liquid-y. We recommend starting with partially melted butter. Then only add more butter if the dough isn't combining. If too much butter is added, put the bowl of dough in the fridge for 5-10 minutes before baking to help firm up the dough a little bit.
Brown Sugar cookies - cookies are baking flat. A little butter goes a long way. Start with the recommended amount and only add more as needed. Ensure your dough balls are on the smaller side and allow for space between them on the baking sheet.
